Blackberry Apple Skillet Pie

Blackberry Apple Skillet Pie: The Charm of Home
It is just about blackberry season!  I love blackberries and I always make cobbler every summer but today I decided to try something I have never done.  I baked a pie in a cast iron skillet!  I have always wanted to try this and it was super easy.

Blackberry Apple Skillet Pie: The Charm of Home
The crust cooks up wonderful in the cast iron.  It was a blackberry apple pie and everyone enjoyed it.

Blackberry Apple Pie

Ingredients:
4 apples, peeled and sliced
2 tablespoons butter
1/3 cup packed light brown sugar
2 tablespoons corn starch
1/4 teaspoon salt
5 cups fresh blackberries
1 teaspoon vanilla extract
1 Pillsbury pie crust
1 egg white
2 teaspoons decorator sugar

Preheat oven to 400 degrees F.
In a 10-inch skillet add butter and saute the apples, brown sugar, corn starch, and salt.  Saute the apples until just tender 7 minutes.  Stir in the blackberries and cook until they begin to soften and release their juice, 2-3 minutes.
Remove from heat, stir in the vanilla, and let cool to room temperature.
Prepare the cast iron skillet (I used a a 9-inch skillet) by placing the room temperature ready made pie crust in the bottom of the skillet and pierce the bottom of the crust with a fork in a few places.  Pour the pie filling into the bottom crust and then unroll the top crust.  Take the top crust and overlap it with the bottom crust around the edges and crimp in the fashion you desire to seal the crust for baking.  Brush the top of the crust with egg white and sprinkle with decorator sugar crystals.
Bake about 25-30 minutes until golden brown and bubbly. Transfer the pie to a wire rack and let cool for 1 hour before serving.

Rustic Place mat by Heritage Lace
For my photos today I used this beautifully rustic Meadow Song Placemat from Heritage Lace.  It is printed on fabric that looks like burlap but it is actually a soft woven polyester.

Coordinating beautifully with the placemat is the Haven Napkin Set.  These napkins are made of a soft laundered cotton that make them as easy to care for as stylish.  Just toss them in the washer when needed.

Thank you very much to Heritage Lace for sponsoring today's post.  The products described were provided to The Charm of Home for this post.  The written description was entirely my own.

Enjoy!

I love apple pie and blackberry pie so this recipe sounds like the perfect combo. I have never tried baking a pie in a cast iron skillet, but now I really want to! Thanks Sherry!

I made this for my mom for mother's day, only did it as a regular pie instead of the skillet. Isn't it so yummy?!?! Your pictures look every bit as good as the Williams Sonoma images!
